An oxidative wine coming from the Spanish region of Extramadura on the southern boarder with Portugal. Made from the Pardina rare variety that was allowed to age “under flor” in Montilla Fino casks for 18 months. A fresh wine with a lovely balance between the oxidative profile and measured acidity. Sherry characteristics on a broad, dry palate and a saline finish. Serve chilled but not very cold (about 20-25 minutes in the fridge).
