What do you want your poulsard wine to “do”? for us the answer is quite a lot.. mainly because we’re so fascinated by this variety and how it manages to show quite a few facets / profiles. The magic though, to us, is in how it manages to be really juicy (think juicy steak/mushroom..) and at the same time be earthy and so terrior driven.
The last thing we want it to have a very light cherry red colour with reflections bordering with pink but not quite pink.. This bottle by Domaine Buronfosse very successfully achieves the first 2 fits and the colour is doesnt quite have that pinkish hue yet its still very nice and light. Overall a beautiful and utterly delicious Poulsard that goes down dangerously quick. Serve slightly chilled (20 minutes in the fridge)
