Background: Located in the Alcardete locality in Toledo, Spain bodega Recuero is a family with a long lineage of viticulture and winemaking in this region (and beyond). Jesus Recuero is the owner and a talented, observant winemaker who champions rare, local varieties some of which are near-extinct, all growing on very old vines of 80-100 year + (quite a few are pre-phyloxera).
Curiously, along with the powerful, barrel aged reds that are so associated with this region, Jesus has had a vision of producing Champagne-level sparkling wines. A vision that he has been developing, dare we say mastering over the past 30 years. The low intervention winemaking and organic viticulture are a way of tradition, and stem from deep respect to their land and the desire to exhibit the terroir as uninterruptedly as possible.
Character & Tasting Notes: A blend made of 87% from 2 red varieties (Moravia AKA Brujidera and Tinta Velasco), and the rest from 4 white varieties (Airen, Malvar, Albillo Pardo & Verdoncho). The whites are from an early harvest in order to bring some acidity and freshness. Made via Methode Champenoise (Traditional method) to include a 36 months period of rest on the fine lees. Second fermentation is triggered 14 months after harvest through the addition of fresh harvest juice. No Dosage & Brut Nature. Disgorged in June 2021.
Very pale pink colour in the glass, a dry yet explosive “attack” with notes of strawberry, fresh watermelon and a slight touch of quince. The mid palate presents good, mouth-watering acidity leading to a long and superbly consistent finish.
We would recommend drinking at around 8-10c and open some 20-30 minutes prior to drinking. Saying that, It is an extremely stable wine that can be drank and keep evolving over 4-5 days after opening (and more). Excellent aperitif & light digestif to pair with oysters, mediterranean salads and also fried chicken and fresh strawberry, fruit salad.
