INFO ON GROWER
Jérôme Bourgeois-Diaz is a young dynamic winemaker. The estate covers an area of 7 hectares made up of about twenty parcels scattered around the town of Crouttes-sur-Marne. Proud of his heritage and determined to produce pure and natural champagne wines, Jerome personally oversees every single aspect of the process with uncompromising strive for perfection. He describes in his own words “We operate a field of seven hectares, about thirty parcels distributed in Crouttes sur Marne and the surrounding communes. Our vineyards, with their clay-limestone soil, are mostly southwestern and planted with 55% Pinot Meunier, 30% Pinot Noir, and 15% Chardonnay.
We have always worked the vines like gardens and this is reflected in our wines. At the harvest, the grapes are sorted at perfect maturity and pressed on traditional presses. Only the best plots are vinified in our cellars.
We work the soil, reason all our interventions on the vine, and aim to obtain an average yield by employing the noble sizes champenoises. The vines are always disbudded by hand and some harvested in green if necessary.
We take extreme care in raising our wines. They are vinified in stainless steel vats, and in oak barrels for special cuvées.Our vintages age at least 27 months in the cellar for the base cuvées and up to 5 years for the largest vintages. They are elaborated by blending the three grape varieties of Champagne, with different proportions, favouring the balance and the fruitiness of the wine. Working wine is for us a passion, and your satisfaction the best of the rewards”
